Starting from scratch you need to enable the right for "Workflow Design". ( follow the steps to create "Business Process Administration" -> visit here.
You should write down and talk / think about the business case. Introduce improvements to automate things. Remove media breaks and add your experience. Just collect the needs and the current pain.
You should start with the "Form / activity Launch manually"
Try all the fields that are available. Some need administration settings (product groups ...) to have a selection
Setup the form fields as you like for the beta testing (without workflow) just to save the form.
Try to use a Datefield and set the time for resubmission ( set the field " work$wipRemindDate" to the field that contains the date $$F... )
When you change the Date to a Date in the future it will be in the follow up view
